Guest Recipe: Cooking for Kids [Part 2 - Lunch]

Ingredients

  • Leftover lean bolognese mixture (hide some veges in it!)
  • 2eggs
  • 1 Tbs Greek Youghrt
  • 1/2 cup grated cheese
  • handful baby spinach, chopped (optional)

Method

  • Preheat an oven to 180C. Line a muffin tin with patty pans (easier clean up!)
  • Spoon cooled bolognese mixture between patty pans and fill 1/3 to 1/2 way (as many til mixture is used)
  • Add a thin layer of spinach (kids won’t even know it’s there once it’s cooked)
  • In a bowl whisk eggs, yoghurt and cheese
  • Fill patty pans up with cheese topping
  • Bake for 20min or until browned
  • Allow to cool before adding to lunchbox
