Guest Recipe: Cooking for Kids [Part 2 - Lunch]

Ingredients
- Leftover lean bolognese mixture (hide some veges in it!)
- 2eggs
- 1 Tbs Greek Youghrt
- 1/2 cup grated cheese
- handful baby spinach, chopped (optional)
Method
- Preheat an oven to 180C. Line a muffin tin with patty pans (easier clean up!)
- Spoon cooled bolognese mixture between patty pans and fill 1/3 to 1/2 way (as many til mixture is used)
- Add a thin layer of spinach (kids won’t even know it’s there once it’s cooked)
- In a bowl whisk eggs, yoghurt and cheese
- Fill patty pans up with cheese topping
- Bake for 20min or until browned
- Allow to cool before adding to lunchbox
